• Tuscan Chicken and Vegetable Soup

    Soup in the summer is probably strange but I can eat soup anytime. Soups are easy and you can use any vegetables you like. Some vegetables that are in season right now are: corn, green beans, okra, onions, peas, tomatoes, leeks, kale, chard, potatoes, summer squash and carrots. This soup is hearty and healthy. 

    The ingredients I used were onion, carrots, zucchini, tomatoes, cannellini beans, garlic, chicken stock, chicken and kale. Cook the chicken however you choose, sautee the vegetables, add the stock and let it simmer until the vegetables are tender. Add the kale the last 5 minutes or so and it's done! I also shredded some parmesan on top to add a little extra something. A bowl of this soup contains a good amount of protein, fiber, vtamins and minerals. Now, even though it's hot outside, go make some soup!
